Banana Crunch Muffins

Ingredients

  • 3 C. flour
  • 1 C. brown sugar, packed
  • 1 T. B.P.
  • 1 t. salt
  • 3/4 t. soda
  • 1/4 t. nutmeg
  • 4 large bananas
  • 1 1/2 4oz containers refrigerated egg substitute (3/4 cup)
  • 1/3 C. oil
  • 1 8oz strawberry-banana low-fat yogurt
  • 1 1/2 C. banana-nut cereal

Preparation

Step 1

In large bowl, mix dry ingds. Coarsely chop 1 banana; set aside. In bowl, wih fork, mash remaining 3 bananas. Stir in egg substitute, oil, yogurt, and chopped banana. Stir mixture into flour mixture just until moistened (batter will be lumpy) Spoon half batter into muffin pans sprayed with Pam. Sprinkle with 3/4 cup cereal. Spoon remaining batter into muffin pans; top with remaining cereal. Bake muffins at 375* about 25 minutes or until golden and toothpick inserted in center comes out clean. Immediately remove muffins from pan; serve warm. Makes 10 jumbo muffins.

Note: Can use 20 regular muffin pans. Bake 15 mins or until brown. Will have half calories, etc.
