Scallops with Bacon & Tarragon

Ingredients

  • 8 fresh Sea scallops
  • Kosher salt
  • ground black pepper
  • 1 slice bacon-cut up
  • 1 tbsp unsalted butter
  • 1/4 cup dry vermouth
  • 2 tbsp lemon juice
  • 2 tbsp water
  • 1 tbsp fresh tarragon
  • 1 tbsp snipped fresh parsley

Preparation

Step 1

sprinkle scallops with salt and pepper-set aside
cook bacon until crisp, reserve drippings, remove bacon
add butter, sear scallops @3 min-turn once-set aside
remove skillet from heat, add vermouth & lemon juice
return to heat bring to boil scraping bottom of pan
meanwhile-slice scallops in half add tarragon, parsley and bacon-swirl together
