Ingredients
- 1/2 Stick Butter
- 1/4 Cup Minced Onion
- 1/4 Cup Flour
- 4 Cups Milk
- 1 (10 oz,) Bag Mixed Vegetables
- 1 Cup Sharp Cheddar Cheese, shredded
- Salt & Pepper to tast

Step 1
In a 2 quart pot, melt butter over medium heat. Add onion and saute, stirring frequently, until translucent. Remove from heat and sprinkle flour over the cooked onion. Gradually add the milk, whisking constantly, until no lumps remain. Add the vegetables. Cook the mixture over medium heat, stirring constantly, until the soup thickens and coats the back of a spoon. Stir in the cheese. Continue heating until the cheese is melted and well combined. Season with salt and pepper to taste.
