Pumpkin Cookies

Ingredients

• 1 cup sugar
• 1 cup butter or margarine
• 1 cup pure pumpkin
• 1 egg
• 2 cups flour
• 1/2 tsp salt
• 1 tsp baking soda
• 1 tsp cinnamon or pumpkin pie spice or both
• Cream cheese frosting

Preparation

Step 1

Combine sugar, butter, and pumpkin together. Add egg and mix. Combine dry ingredients and gradually add to wet mixture until mixed. Drop by tablespoon onto parchment paper lined baking sheet. Bake at 375 degrees for 10-12 minutes. Cool on cooling rack.

When cool, top with cream cheese frosting.
