ROLL - FOCACCIA LOBSTER

Ingredients

  • 1/4 C. fresh tarragon leaves
  • 1 lemon, zested
  • 1/4 C. lemon juice
  • 1 clove garlic, minced
  • 1 tsp. salt
  • 1/2 C. extra-virgin olive oil
  • 1/2 tsp. freshly ground black pepper
  • 1/4 C. cream
  • 1/2 C. mascarpone cheese
  • 1 lb. cooked lobster tails, cut into large cubes
  • 4 pieces Focaccia bread (about 4 by
  • 5 inches each)
  • 1/4 C. roughly chopped fresh chives

Preparation

Step 1

1. Place tarragon, chives, lemon zest, lemon juice, garlic, salt, and pepper in a blender and blend until herbs are minced and ingredients are combined. With the machine running, add olive oil, then mascarpone cheese and blend until mixed.

2. Transfer lobster to a medium bowl. Drizzle herb sauce and stir to coat. Place lobster on focaccia bread and cover with another slice. Serve immediately.
