Potato Cheese Buscuits

Ingredients

  • 1 cup cubed peeled yukon gold potatoes
  • 1 1/2 flour
  • 2 tsp. baking powder
  • 1/2 tsp. baking soda
  • 1/4 tsp. salt
  • 2 Tbs. butter cut into pieces
  • 3/4 cup shredded sharp cheddar cheese
  • 1/2 cup + 1 Tbs. buttermilk
  • 1/4 cup minced green onions
  • 1 Tbs. cold water
  • 1 egg white beaten lightly

Preparation

Step 1

preheat oven to 425

boil potatoes 15 min., mash and cool
combine flour, soda, powder, and salt
cut in butter
add potato, cheese, buttermilk, onions & stir
turn onto floured surface and knead 5x
roll to 3/4" thick
cut with 3" buscuit cutter
brush with whites and water beaten together

cook 20 min.
