Ingredients

  • Panko breadcumbs 4 oz
  • 3 TBSP dried parsley
  • 1 TBSP dried onion
  • 2 tsp dried thyme
  • 2 tsp dried oregano
  • 2 tsp kosher salt
  • 2 tsp minced dried garlic
  • 4 TBSP butter
  • in batches lightly toast breadcrumbs in melted butter, not browned, just light toast.
  • 4 TBSP salted butter
  • ½ head of garlic, roasted
  • 4 TBSP flour
  • 4 cups milk
  • 1/3 cup grated gruyere
  • 1 cup asagio fresco cut into chunks at room temp (or other cheese)
  • Cooked pasta

Preparation

Step 1

Preheat oven to 350

Melt butter in pot, squeeze in roasted garlic into butter and whisk

Add flour and whisk a few minutes

Slowly add milk, whisking constantly, keep mixing til thickens, take off heat immediately

Add cheese in small batches til incorporated, first gruyere then cubed cheese, season

Add cooked pasta, pour into dish, put breadcrumbs on top and oven for 20 mins. Turn oven off, broiler for 2-5 mins.

Additional:
Top with fresh herbs or add another layer of cheese under breadcrumbs
