Ingredients

  • 4 slices bacon, cut into pieces
  • 3 potatoes - peeled and cut into cubes
  • 1 small onion - chopped
  • 1/2 cup milk
  • 1/4 cup all purpose flour
  • 1-1/4 cup milk
  • 1 tsp salt
  • 1/8 tsp. pepper
  • 1/2 cup light cream
  • 2- 6-1/2 oz cans mined clams

Step 1

Micro-cook bacon in a 2 quart casserole, covered on 100% (high) 3-1/2 to 4-1/2 min or until crisp. Drain, reserve 2 tbls. drippings. Add potatoes and onions to bacon. Micro-cook covered on 100% 7-1/2 to 9 min. or until potatoes are tender, stirring once during cooking.

Combine 1/2 cup milk and the flour; add to casserole with 1-1/4 cups milk, salt and pepper. Micro-cook, uncovered on 100% 4-1/2 to 5-1/2 min. or until thickened and bubbly, stirring every minute. Stir in cream and undrained clams. Micro-cook, uncovered, on 100% 3 to 4 min. or until heated through. Makes 4 to 6 servings.
