Chicken Chili Mole Tacos
- 1 tsp. Canola Oil
- 1 Large Onion chopped
- 2 Garlic Cloved ,minced
- 1 Tab unsweetened Cocoa powder
- 1 tsp Chili powder
- 1 tsp Cumin
- 1/2 tsp cinnamon
- 1/2 tsp Salt
- 1/2 tsp Sugar
- 1/2 Oregano
- 1 (14 1/2oz )can Diced Tomatoes
- 1 (15 1/2 oz) can Pinto Beans rinsed & drained
- 1 Cup Cooked chopped Chicken
- 8 Taco shells heated
- 2 cups shredded Romaine lettuce
- 1/2 cup shredded Cheese
- 1 1
Heat oil in dutch oven over medium heat add Onion,Garlic until golden brown about 7 minutes. Add Cocoa powder,Chili Powder, Cumin,Cinnamon,Salt,Sugar and Oregano. Cook until fragrant about 1 minute.
Add Tomatoes bring to boil. Reduce heat simmer until flavors are blended about 8 minutes.
Stir in Beans and Chicken. Return to simmer and cook until heated about 3 minutes.
Spoon about 1/3 Cup of Chili into each taco shell serve with lettuce and cheese.
