Ingredients

  • 1 1/2 STICKS PEPPERONI, SLICED AND QUARTERED
  • 1/2 POUND ELBOW MACARONI OR TWISTS
  • 2 GREEN PEPPERS, CUT INTO STRIPS AND HALVED
  • 1 RED ONION, SLICED AND CHOPPED
  • 1 CAN OF KIDNEY BEANS, DRAINED
  • 3 TBSP ITALIAN PARSLEY, CHOPPED
  • 1/4 CUP OLIVE OIL
  • 3 TBSP WINE VINEGAR
  • 1/2 TSP SALT
  • PEPPER
  • OREGANO

Preparation

Step 1

Cook and drain the pasta. Cool with cold water. Place in large bowl.

Combine pepperoni, peppers, onions, beans, and parsley. Fold into pasta.

In a small bowl, combine olive oil, vinegar, garlic, S&P, and oregano. Beat vigorously with a fork. Pour dressing over pasta , etc.

Chill for a few hours. Adjust seasoning. Serve.
