Ingredients
- 1 12oz. pkg. frozen perch fillets
- 2 tbsp. onion, finely chopped
- 1 tbsp. butter
- 1/4 lb. sliced mushrooms
- 2 tbsp. cooking sherry
- 1 tbsp. Dijon mustard
- 1 tbsp. freshly chopped parsley
- salt and pepper to taste
- 1/4 cup dry cracker crumbs
- 1/3 cups grated swiss cheese

Preparation
Step 1
Preheat oven to 400 degree F. Saute onion in butter until soft. Add mushrooms and stir over high heat 2 mins. Stir in sherry, mustard, parsley and seasonings. Sprinkle 1/2 of crumbs in greased dish. Arrange fish over crumbs in a single layer. Spread mushroom mixture over fish. Sprinkle on crumbs. Cover with cheese. bake 20 mins.
