Ingredients

  • 1 lemon
  • 1/4 cup apple cider vinegar
  • 1 cove minced garlic
  • 1/2 t dijon mustard
  • 1 T chopped chives
  • 1/4 cup chopped fresh basil
  • 1/2 cup pain yogurt
  • 1 c cup extra virgin olive oil
  • fresh ground pepper
  • 1 pint red grape or cherry tomatoes, halved
  • 1 pint yellow grape tomatoes, halved
  • 3 stalks celery, sliced thinly
  • 6 scallions, sliced

Preparation

Step 1

Prepare the vinaigrette just before use. Place lemon in small bowl and microwave until the essential oils in the skin are released. Set aside until cool enough to handle.
Pour vinegar into blender, turn on and squeeze lemon juice from lemon, Leave blender running, add 1 at a time: garlic, mustard, chives, basil and yogurt and blend until smooth. While blender running, add oil in slow stream.
Mix together tomatoes, celery and scallions and toss with dressing.
