Ingredients
- Marinade:
- 1 head broccoli, cut into florets
- 1 carrot, sliced diagonally
- 10 small tomatoes or cherry tomatoes
- 10 button or field mushrooms
- 1 red onion, cut into large wedes or pieces
- 2 red peppers, cut into 1 inch cubes
- 13 oz package firm tofu, cut into cubes
- 1/4 cup olive oil
- 1/4 cup tamari
- 3 tbsp fresh gingerroot, grated
- 1/4 cup nutritional yeast flakes
- 1 tbsp maple syrup
- 1 tbsp Dijon mustard
Preparation
Step 1
Prepare the marinade first by combining all of the marinade ingredients in a bowl and stirring them together thoroughly. Set aside.
Prepare the kebabs by arranging the prepared vegetables and tofu on 10-12 wooden skewers Place the skewered vegetables on a baking sheet and drip the marinade evenly over kebabs so that all of the vegetables and tofu are covered. Allow them to sit for 15-20 minutes to absorb some of the marinade. You can scoop up the marinade that drips through onto the pan and pour it back onto the kebabs. To bake the kebabs, place them on a barbecue grill on low heat, grilling and rotating them as they brown (about 10-15 minutes in total), or in a preheated oven at 350 F and bake for about 15-20 minutes. Serve hot.
