Ingredients

  • 1 cup cooked, riced cauliflower**
  • 1 egg
  • 1 cup mozzarella or parm or asiago or manchego or cheddar cheese or combo of a cup of whatever cheese you want
  • 1 tsp oregano
  • 2 tsp parsley
  • acorn squash
  • honey or agave
  • red pepper flakes
  • shrooms
  • arugula
  • sun dried tomaotes
  • pizza sauce
  • toppings
  • mozzarella or cheddar cheese

Preparation

Step 1

Preheat oven to 450 degrees farenheit.

Spray a cookie sheet with non-stick spray.

Slice the squash in half from top to 
bottom.Scoop out the seeds. Slice the 
squash into 1/2 to 3/4‐inch wide half 
moons and place in a medium bowl. Toss 
the squash with the honey, olive oil, 
red pepper flakes, 1/4 teaspoon salt, 
and 1/4 teaspoon pepper. Place the 
squash on a parchment‐lined baking 
sheet. Bake the squash until tender and 
golden, about 20 to 25 minutes. 
In a medium bowl, combine cauliflower, egg and mozzarella, whatever cheese. Press evenly on the pan. Sprinkle evenly with oregano and parsley.
Bake at 450 degrees for 12-15 minutes (15-20 minutes if you double the recipe).
Remove the pan from the oven. To the crust, add sauce, then toppings and cheese.
Place under a broiler at high heat just until cheese is melted.
