Ingredients

  • 2 tablespoons ghee
  • 2 lbs lean braising steak in 1 inch cubes
  • 1 onion, finely chopped
  • 3 garlic cloves
  • 1 inch fresh gingerroot, grated
  • 4 fresh red chilies, chopped
  • 4 green cardamom pods
  • 4 whole cloves
  • 2 teaspoon coriander seeds
  • 2 teaspoon cumin seeds
  • 1 teaspoon paprika
  • 1 teaspoon salt
  • 1 bay leaf
  • 1/4 cup low fat plain yogurt
  • 1 inch cinnamon stick
  • 2/3 cup hot water
  • 1/4 teaspoon garam masala
  • pepper

Preparation

Step 1

Heat ghee in large, flameproof casserole dish and brown meat. Remove meat from dish and set aside.

Add onions to ghee and cook on high heat for 3-4 minutes, stir occasionally. In a bowl, grind together garlic, ginger, chilies, cardamon, cloves, coriander seeds, cumin seeds, paprika, and salt. Add spice paste and bay leaf to casserole. Stir until fragrant.

Return meat and any juices to casserole and simmer for 2-3 minutes. Gradually stir in yogurt. Keep sauce simmering. Stir in cinnamon stick and hot water. Pepper to taste.

Cover casserole dish and cook in oven preheated to 350 degrees for 1 1/4 hours or until meat is very tender and sauce is reduced. Discard cinnamon stick and stir in garam masala. Remove any oil from the surface before serving.
