  • 1 lb ground chuck
  • 1/2 lb ground veal
  • 1/2 lb ground pork
  • 2 eggs
  • 2 small Idaho potatoes
  • 1/2 cup plain bread crumbs
  • 1 1/2 cups Pecorino Romano
  • 1/4 cup chopped parsley
  • 1/2 teasp. sea salt
  • 2 cloves garlic peeled
  • olive oil



Step 1

Cook potatoes until tender in salted water.put through a ricer and set aside to cool. DO NOT MASH. Mix eggs cheese and parsley, salt and set aside.Add bread crumbs to ground meats, then add cooled riced potatoes along with egg mixture. DO NOT OVERMIX.
In fry pan, add oil and garlic, heat oil slowly until garlic is golden, then discard garlic. fry until golden brown, about 2-3 min on each side. Drain on paper towels, add to gravy 30-40 min.
