Soup/Cream of Broccoli

Ingredients

  • 1 # Broccoli
  • 1/4 # Butter
  • 2 sliced Leeks
  • 4 Tbsp Flour
  • 3 cups Chicken Broth
  • 3 cups Milk
  • 1 tsp. salt
  • 1 Tbsp Sugar
  • White Pepper to taste

Preparation

Step 1

Cut up and cook broccoli until tender. Melt butter and add leeks. Cover and simmer for 30 minutes. Add broccoli. Stir in flour. Cook for a few minutes. Add broth and milk. Cook and stir until slightly thickened. Puree a little at a time. When ready add heavy cream.
