Southwestern Breakfast Bites

Ingredients
- 4 ounces Chorizo sausage, casings removed and crumbled (may use any breakfast sausage, the spicier the better)
- 2 tablespoons diced red onion
- 2 tablespoons diced red bell pepper
- 2 tablespoons diced green bell pepper
- 5 large eggs
- 1/4 teaspoon kosher salt
- 1/8 teaspoon black pepper
- 1 teaspoon chopped fresh cilantro
- 1/2 cup pepper shredded jack cheese
- 1/4 cup diced tomatoes

SPECIAL EQUIPMENT: 6 cup muffin pan, lined with paper cups or sprayed with vegetable oil
1. Place the rack in the center position and preheat the oven to 350
2. Add the chorizo, onion, and bell pepper to a saute pan and cook over medium high heat for 4 to 5 minutes until sausage is fully cooked. Remove from the heat and let cool.
3. Add the eggs, salt, pepper, and cilantro to a large bowl and mix well with a wooden spoon, then stir in the cooked sausage mixture.
4. Fill the muffin cups evenly with the finished mixture and sprinkle each with the pepper jack cheese and diced tomatos. Bake for 15 to 20 minutes, until the eggs are firm, and serve warm.
HEALTHFUL HINTS: turkey sausage may be used to reduce fats but you'll most likely have to use 1 tablespoon canola oil to cook it. You can cut corners and calories without losing flavor by using a couple of tablespoons of your favorite sugar free salsa in place of the onion, pepper, and tomatoes in the recipe
