Avocado Dip with Green Crudites

Ingredients

  • 2 large ripe avocados, pitted, peeled and coarsely chopped
  • 1 cup cilantro leaves
  • 1/3 cup chopped red onion
  • 1 small jalapeno, seeded and chopped
  • 2 tbsp fresh lime juice
  • Salt and pepper to taste
  • 2 lb. mixed broccoli, asparagus and sugar snap peas

Preparation

Step 1

Place avocados, cilantro, onion, jalapeno and lime juice in food processor.

Puree until smooth.

Season with salt and pepper, then cover and refrigerate until ready to use. Serve with vegetables.
