CARIBBEAN SPINACH SALAD

Ingredients

• 5 C torn spinach
• 3 c Romaine lettuce
• 2 c torn leaf lettuce
• 20oz can pineapple chunks in juice
• 11oz can mandarin oranges, drained
• 6 slices bacon, cooked crumbled
• 1 sm red onion, sliced
• cooked salad dressing
• 1/2 c sliced toasted almonds

Preparation

Step 1

dressing

1/3c sugar
1/3c cider vinegar
1/4 tsp salt
1 tsp celery seed
1/2 tsp dry mustard
1 tsp minced onion
1 egg, slightly beaten
1/3c vegetable oil

Place all ingredients except dressing and nuts in a bowl. Toss with the hot cooked dressing. sprinkle nuts on top.
