Mini Peanut Butter Cheesecakes

Ingredients

  • 12 Vanilla wafers
  • 11 oz Cream cheese softened
  • ¼ cup Sugar
  • ½ tsp Vanilla
  • 2 Eggs
  • Mini Peanut butter cups

Preparation

Step 1

1. Heat over to 350
2. Line muffin pans with paper baking cups
3. Place 1 wafer flat side down in each cup
4. Beat cream cheese & sugar in medium bowl
5. Beat until fluffy
6. Add vanilla
7. Beat in eggs one at a time
8. Fill cups ¾ cups full. Top filling with 1 PB cup
9. Bake 15 minutes
10. Cool
11. Cover and refrigerate at least 2 hours
