Chicken with sweet peppers and balsamic vinegar

Ingredients

  • 4 skinless boneless chicken breasts
  • 4 tablespoons olive oil
  • 4 cups thinly sliced sweet peppers
  • 1 medium onion thinly sliced
  • 1/4 cup chopped basil
  • 4 garlic cloves finely chopped
  • 3 tablespoons balsamic vinegar
  • salt and pepper to taste

Preparation

Step 1

Season chicken with salt and pepper and then Brown in 2 tablespoons of olive oil.
Set aside on platter
add remaining olive oil to skillet and cook onions and peppers over medium heat until softened.
Add garlic and cook for one minute.
Stir in vinegar and one half of basil.
Add chicken breasts back to pan and reduce heat to medium well.
Cook until chicken is done. Garnish and serve with remaining basil
