Ingredients
- 1 garlic clove, halved
- 1 cup sweet wine, such as Sauternes
- 3/4 pound Gorgonzola Dolce or other blue cheese, crumbled
- 2 tablespoons plus 2 teaspoons cornstarch
- 1 tablespoon cream cheese
- Salt to taste
- pepper to taste
Preparation
Step 1
Rub the inside of the pot with the garlic. Add the wine and bring it to a simmer over medium high heat.
Meanwhile, toss the cheese with the cornstarch. Add a quarter of the cheese to the wine, and whisk constantly until melted. Repeat with the remaining cheese. Whisk in the cream cheese, and season to taste.
