Artichoke Chicken

Ingredients

  • • 4-6 pieces of chicken fillets
  • • ½ cup flour
  • • ¼ tsp. salt and ¼ tsp. pepper
  • • 1/3 cup dry white wine (Sauvignon Blanc is good)
  • • 1 jar of Pastene sun dried tomatoes, in oil
  • • 1 jar of artichoke hearts
  • • Lemon
  • • Pasta

Preparation

Step 1

Mix flour, salt and pepper; coat chicken in flour mixture and fry in 4 tbsp. olive oil until completely cooked and golden. Set chicken aside; clean pan of excess oil.

Place chicken back in pan and add the wine, sun dried tomatoes with the oil, artichoke hearts with the liquid in the jar and squeeze juice from ½ lemon over the mixture. Let this simmer for a while. A sauce will form that is orange-ish in color. It will thicken a bit but not like gravy.

When this is done, remove chicken to platter and pour the sauce with artichokes and tomatoes over cooked pasta.
