Thumbprint Cookies

Ingredients

  • 1/2 cup soft butter
  • 1/2 tsp vanilla extract
  • 1/4 cup brown sugar
  • 1 egg yolk
  • 1 1/3 cups flour
  • 1/4 tsp salt

Preparation

Step 1

Mix first 3 ingredients

Sift together flour and salt
Stir into butter mixture
Roll in balls
Dip into slightly beaten egg white
Roll in finely chopped pecans
Place about 1" apart on baking sheet and press thumb into center of each
Put about 1 tsp of red raspberry preserves into each cookie and back 10-12" at 350 degrees
