Onion Corn Bread Shortcake

Ingredients
- 2 large Sweet Onions (thinly sliced)
- 1/2 cup Butter or Margarine
- 8 oz. Sour Cream
- 1/2 tsp Dill Weed
- 1/4 tsp Salt
- 8 oz. shredded Cheddar Cheese (divided)
- 1 can Creamed Corn (undrained)
- 1/2 cup Milk
- 1 box Jiffy Brand Corn Muffin Mix
- 1 Egg beaten
- 4 drops Tabasco Sauce

Step 1
Onion Mixture:
Saute sliced onions in butter, stir in sour cream, dill weed, salt and 4 oz. cheese
Corn Mixture:
In a separate bowl, combine corn, milk, muffin mix, egg and tabasco sauce.
Pour corn mixture in buttered 9x13 baking dish. Spread onion mixture over the top of corn mixture. Top with remaining cheese.
Bake at 325 F for 30-45 minutes.
