Ingredients
- • 12 slices day-old bread, crusts removed
- • 2 packages (8 oz. each) cream cheese
- • 1/3 cup sugar
- • 14 eggs
- • 1 c. blueberries (fresh or frozen)
- • 2 cup milk
- • 1/3 cup maple syrup or honey
- BLUEBERRY SAUCE
- • 1-cup sugar
- • 2 tbsp. cornstarch
- • 1 cup water
- • 1 cup blueberries (fresh or frozen)
- • 1 tbsp. butter
Preparation
Step 1
Preheat oven to 350°
Cut bread into 1” cubes; place half in a greased 13x9x2” baking dish. Top with blueberries and remaining bread. In a large bowl, beat 12 eggs; add milk and syrup; mix well. Pour over bread; cover and chill 8 hours or overnight.
Remove from refrigerator 30 minutes before baking time. Mix cream cheese with sugar and 2 eggs. Drop by tablespoon onto the bread cubes. Cover and bake at 350 for 30 minutes. Uncover and bake 25-30 minutes more or until golden brown and the center is set. Serve with blueberry sauce.
*Sauce
In a saucepan combine sugar and cornstarch; add water. Bring to a boil over medium heat; boil for 3 minutes stirring constantly. Stir in blueberries; reduce heat and simmer for 8-10 minutes or until blueberries have burst. Stir in butter until melted.
