Flatbread Pizza with Feta, Mint, and Lemon Zest

Ingredients
- 1 can pizza dough (I use Pillsbury)
- Olive oil
- 1 garlic clove, halved
- 1 cup feta cheese
- 1/4 cup grated Parmesan cheese
- 3 tblspns. minced fresh mint (or basil)
- 1 tblspn. lemon zest
- Red chili-pepper flakes
Preparation
Step 1
Stretch dough into a large rectangle. Cut in half. Drizzle both with olive oil, and bake on greased sheet at 450 degrees until golden brown, about 10 minutes. While hot, rub each flatbread with garlic. Top with feta and Parmesan, and bake until melted, about 3 minutes. Remove and sprinkle with mint, zest, and a few shakes of chili-pepper flakes.
