Ingredients

  • 5 eggs
  • 1 1/4 cup vegetable oil
  • 1 (15oz) can pumpkin
  • 2 cups flour
  • 2 cups sugar
  • 2 pkgs (3 oz each) cook and serve vanilla pudding
  • 1 tsp baking soda
  • 1 tsp cinnamon
  • 1/2 tsp salt

Step 1

In a mixing bowl, beat eggs. Add oil and pumpkin, and beat until smooth. Combine remaining ingredients and mix thoroughly. Pour into 2 greased baking loaf pans (fill no more than 2/3 way to top), and bake at 325 for ~1 hour. You'll want to check for doneness starting at 50 mins with a toothpick, as depending on the exact size of your loaf pan it can take anywhere from 50-75 mins. Just check every 5 mins starting at 50 mins and you'll be fine. And remember how long it took for next time :)
