Apple Walnut "Bread"
Variations of this bread can be used for banana bread, zucchini carrot bread, and so on. Replace apple-sauce with 1 1/2 C canned pumpkin puree and add 1 1/2 tsp nutmeg to make pumpkin bread.
- 2 C Ground Almonds
- 1 C Chopped Walnuts
- 2 Tbs Ground Flaxseeds
- 1 Tbs ground cinnamon
- 2 tsp baking powder
- 1/2 tsp sea salt
- 2 Lg Eggs
- 1 C Unsweetened Apple Sauce
- 1/2 C Walnut Oil, EVOO, or melted butter
- 1/4 C Sour Cream or Coconut Milk
Cooking time 30mins
Preheat oven to 325. Coat a 9x5 loaf pan liberally with oil (coconut works well).
Combine ground almonds, walnuts, flaxseeds, cinnamon, baking powder, and salt in a bowl and stir until thoroughly mixed.
Combine eggs, applesauce, oil, and sour cream or coconut mild in a measuring cup. Pour mixture into dry ingredients and stir until just incorporated. If the mixture is very stiff, add 1-2 Tbs of coconut mild. Press "Dough" into the pan and bake until a toothpick comes out dry, about 45 min then turn out.
