Ingredients

  • 3 cups all purpose flour
  • 1 teaspoon salt
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • 3 teaspoons ground cinnamon
  • 3 eggs
  • 1 cup vegetable oil
  • 2 1/4 cups white sugar
  • 3 teaspoons vanilla extract
  • 1 cup chopped walnuts
  • 2 cups grated zucchini

Preparation

Step 1

pre-heat oven 325 degrees
grease and flour (2) 8x4 pans

sift flour, salt, baking powder, baking soda and cinnamon together in a bowl

beat eggs, oil, vanilla extract, and sugar in a large bowl add sifted ingredients to the creamed mixture and beat well
stir in the zucchini and nuts until well combined
pour the batter into the pans and bake 40-60 minutes until the tester inserted in the center comes out clean.

coo in pan on rack about 20 minutes remove from pan and completely cool on rack
