Ingredients

  • 4 C Low-sodium Chicken Broth
  • 1/4 C EVOO
  • 1 Lbs Boneless, skinless chicken breast cut into 1/2" chunks
  • 2-3 Garlic Cloves
  • 1 Large Onion
  • 1 Red Bell Pepper
  • 2 Tomatoes
  • 3-4 Jalapeno Chile Peppers
  • Salt and black pepper
  • 2 Avocados
  • 1 C Shredded Monterey Jack Cheese
  • 1/2 C Chopped Cilantro
  • 4 Tbs Sour Cream

Step 1

Bring broth to a boil in a large saucepan over medium heat.

Meanwhile, heat the oil in a large skillet over medium heat. Add chicken and garlic and cook until chicken is nicely browned. 5-6 Min

Add first 9 ingredients to the broth and return to a boil. Reduce to a simmer, cover, and cook for 30 min.

Top with avocado, cheese, cilantro, and a spoonful of sour cream.
