Fruit Pizza/ Vanilla Cream Fruit Tart

Ingredients

  • Crust:
  • 3/4 C butter softened
  • 1/2 C p. sugar
  • 1 1/2 C flour
  • Filling:
  • 1/4 C whipping cream
  • 1 pkg vanilla chips, melted and cooled
  • 1 8 oz. pkg cream cheese
  • Fruit:
  • fresh strawberries
  • fresh blueberries
  • fresh raspberries
  • Topping:
  • 1/2 C pineapple juice
  • 1/4 C sugar
  • 1 T cornstarch
  • 1/2 t lemon juice

Preparation

Step 1

Cream butter and p. sugar. Beat in flour. Pat into bottom of greased 12 in. pizza pan. Bake at 300 degrees for 25 min or til lightly browned. Cool.
In another bowl, beat melted chips and cream. Add cream cheese and beat til smooth. Spread over crust. Chill for 30 min.
Arrange fruit over filling.
In saucepan, combine pineapple juice, sugar, cornstarch and lemon juice; bring to boil. Boil for 2 min or til thickened, stirring constantly. Cool; brush over fruit. Chill 1 hr before serving. Store in refrigerator.
