Better Cheddar Cheese Crisps

Ingredients
- 2 ounces cheddar cheese
- cool cucumber chiptole chutney, as needed (optional: may use no sugar added fresh or store bought salsa-Paul Newmans brand)
Preparation
Step 1
1. Preheat the oven to 400. Line a baking sheet with parchment paper.
2. Stack the cheddar slices and cut them into about 24 small pieces. Arrange them on the parchment paper lined baking sheet in 4 rows of 6, leaving as much space in between each as possible
3. Bake until well browned and crispy, 7 to 7 1/2 minutes. If undercooked they'll be soggy, so don't be afraid to check them and put them back in for more time, if needed.
4. Cool the crisps completely before serving; as they cool they will crisp up even more. Store on the counter in an airtight container for a few days.
