Cajun Spiced Ham

Ingredients

  • 1 T packed brown sugar
  • 1 T garlic powder
  • 1 T onion powder
  • 1 T dried oregano,crushed
  • 1 t paprika
  • 1 to 2 t cayenne powder
  • 1 t salt
  • 1 t fresh or dried shredded lemon peel
  • 1 t ground black pepper
  • 1 6 to 8 lb cooked ham, rump half

Preparation

Step 1

Preheat oven to 325 degrees. Combine all ingredients for spice mixture. Sprinkle mixture over ham; rub over ham with your fingers.

Place ham on rack in a shallow roasting pan. Insert meat thermometer into center of ham.

Place roasting pan on oven rack. Pour enough water into roasting pan to reach 1/2" up the side of the pan. Cover with foil; Bake for 1 hour. Remove foil. Bake for 30 minutes to 1 1/4 hours more or until thermometer registers 140 degrees.
