Ingredients

  • 1 14oz can crushed pineapple
  • 1 tsp. each: butter, cornstarch
  • 1 tbsp. + 1 tbsp. lemon juice
  • 1 cup cake flour
  • 1/2 baking soda
  • 1/3 cup buttermilk
  • 3/4 cup Equal
  • 1/4 cup butter
  • 1 egg
  • 1 1/2 tsp. baking powder
  • 1/8 tsp. each: cinnamon, nutmeg, ginger

Step 1

Drain pineapple - keep 1/4 cup of the juice. Grease 9" pan and melt 1 tsp. butter; stir in pineapple, 1/4 cup Equal, cornstarch, 1 tbsp. lemon juice. In bowl, cream 1/4 cup butter with 1/2 cup Equal and egg until fluffy. Combine flour, baking powder, baking soda and spices. Combine pineapple juice with buttermilk and 1 tbsp. lemon juice. Add dry ingredients to creamed mixture, alternating with liquid. Pour batter over pineapple mixture in casserole. Microwave at medium power for 6 mins. Microwave at high power 1-4 mins. until toothpick comes out clean. Let stand 5 mins. Serve.
