Ingredients
- Glaze:
- 2 c. flour
- 1/3 c. sugar
- 2 tsp. baking powder
- 1/2 tsp. baking soda
- 1/4 tsp. salt
- 1 c. lemon yogurt of plain yogurt
- 1 egg, lightly beaten
- 1/4 c. butter, softened
- 1 tsp. lemon zest
- 1 c. frozen or fresh blueberries
- 1/2 c. icing sugar
- 1 tbsp. lemon juice
- 1/2 tsp. lemon zest
Preparation
Step 1
In small bowl, mix flour, sugar, baking powder, soda and salt.
In medium bowl, mix yogurt, egg, butter, and lemon zest.
Mix wet ingredients well with dry. Carefully fold in berries.
Place 1 large spoonful of mixture in well-oiled muffin tins.
Bake at 350 degrees for approximately 15 minutes or until lightly browned.
Meanwhile, make glaze; mix icing sugar, lemon juice and lemon zest together. Brush on top of warm muffins. Serve warm.
