Ingredients

  • 1 8.5 OZ. CORNBREAD MIX, BAKE AS DIRECTED
  • 1 ENVELOPE RANCH DRESSING MIX
  • 1 CUP SOUR CREAM
  • 1 CUP MAYO
  • 1 SWEET RED BELL PEPPER, SEEDED & CHOPPED
  • 1 GREEN BELL PEPPER, SEEDED & CHOPPED
  • 1 LARGE ONION OR BUNCH OF GREEN ONIONS, CHOPPED
  • 4 ROMA TOMATOES, CHOPPED
  • 1 16 OZ. CAN PINTO BEANS, DRAINED
  • 2 CANS WHOLE KERNEL CORN, DRAINED
  • 2 CUPS CHEDDAR CHEESE, SHREDDED
  • 10 SLICES BACON, COOKED CRISP AND CRUMBLED

Preparation

Step 1

Bake cornbread according to pkg. directions. Combine Ranch dressing mix, sour cream and mayo in small bowl. In another bowl, combine peppers, onion, tomatoes, beans and corn. In 3 qt. salad bowl, layer 1/2 cornbread 1/2 veggies, 1/2 cheese, 1/2 bacon and 1/2 dressing. Repeat layers.
