Ingredients

  • 1 lb. uncooked breakfast sausage {16oz/454g}
  • 2 cups grated cheddar cheese; Cabot sharp or extra-sharp {8oz/227g}
  • 1/4 cup chopped fresh or dried chives {3/8oz/11g}
  • 2 cups G-F/A-P BAKING MIX {8.5oz/241g}
  • 1 pinch cayenne pepper, optional; for kick
  • 2 large eggs

Preparation

Step 1

Preheat oven to 350°F. Line a baking sheet with parchment.

Stir together all ingredients in a large bowl, mixing until well combined.

Roll mixture into 1” balls; a tablespoon cookie scoop works well for portioning. Place balls onto prepared baking sheet, leaving about 1” between them.

Bake bites 18-20 minutes, until they're golden brown. Remove from oven, and cool slightly before serving.

Store any leftovers in the refrigerator for several days; freeze for longer storage.

Makes about 36 bites
