Fennel, Apple and Walnut Salad with Citrus Vinaigrette

Ingredients
- 1 recipe basic vinaigrette using cider vinegar in place of white wine vinegar
- 2 T orange juice
- 2 T honey
- 1 clove garlic, minced
- 4 cups curly endive, torn
- 3 c thinly sliced fennel bulbs
- 1 c cubed or thinly sliced apple (1 med)
- 1/2 c coarsely chopped walnuts, toasted
- 1/2 c thinly sliced red onion
- 1/2 c crumbled feta cheese
- sea salt flakes
- ground pepper

Preparation
Step 1
Add oj, honey and garlic to basic vinaigrette. mix well.
In an extra large bowl combine endive, fennel, apple, walnuts, red onion and cheese. Drizzle with dressing, toss to coat. Season to taste with salt and pepper. Makes 10 to 12 servings.
Basic Vinaigrette
In a small screw top jar combine 1/4c olive oil, 2T lemon juice and 2T white wine vinegar. Cover and shake well.
