ROASTED POTATO SALAD

Ingredients

  • new potatoes, cut in bite size pieces
  • red pepper
  • yellow pepper
  • celery
  • red onion
  • eggs (hard boiled)
  • dill
  • mayonnaise
  • 1 Tbs Durkees

Preparation

Step 1

COAT new potatoes with EVOO and season with house seasoning.

BAKE @ 400° for 35 - 40 minutes, stirring occasionally.

CUT peppers in half and put in with potatoes last 10 - 15 minutes to roast.

COOL veggies.

CHOP celery, red onion, eggs, dill and roasted peppers.

MIX together mayonnaise and Durkees.

MIX potatoes, veggies and dressing together.
