Ingredients

  • 12 corn tortilla (6-7 inch)
  • 1 can refried beans
  • 1 med onion
  • 1 small can chopped olives
  • Grated cheese
  • Sauce
  • 1 large can mild enchilado sauce (Rosarita brand)
  • 1 tomato soup
  • 1 can water
  • 2 TBSP butter

Preparation

Step 1

1) Mix beans, onions and olives
2) Soften tortilla's in microwave ( a few at a time) Cover with paper towel bottom and top about 30 seconds
3) Put large spoon of bean mixture on tortilla, add grated cheese and roll up; place in a greased casserole dish.

Sauce
1) Mix all ingredients together in a sauce pan and heat to boiling.
2) Pour sauce over enchiladas,

Bake at 325 degrees til bubbly in center.
