Vietnamese Style Summer Rolls with Shrimp & Mango

Ingredients

  • Red Chili Mayo:
  • 1 Lb. large shrimp, peeled and deveined
  • 2 medium ripe but not soft mangoes
  • red chili mayo
  • 1 bunch fresh mint
  • 1 bunch fresh cilantro
  • 1 cup homemade mayo
  • 1/3 cup sriracha
  • 1/4 t salt
  • 1 T lemon

Preparation

Step 1

Cook the shrimp in boiling salted water for 2 minutes. Drain & rinse in cold water. Pat dry. Slice in half horizontally.
Peel and julienne the mangoes.
Dip the rice papers into hot water to soften. Roll 6-8 strips of mango with 6 leaves each cilantro and mint, and a 1/2 t of the mayo... halfway. Place 3 shrimp halves on top and finish rolling.

Red Chili Mayo:
Mix all ingredients together in bowl.
