Cranberry Orange Muffins

Ingredients

• 1 1 1 box Orange Supreme Cake Mix
• 1/4 1/4 1/4 cup flour
• 1 1 1 tsp baking powder
• 3 3 3 eggs
• 2/3 2/3 2/3 cup milk
• 1/3 1/3 1/3 cup oil
• 1 1/2 1 1/2 1/2 cups cranberries (if frozen, thaw and pat dry)

Preparation

Step 1

Preheat oven to 375. Grease or put paper liners in your muffin pans.

Mix the dry ingredients together. In another bowl, whisk the eggs, milk, oil. Pour into the dry mixture and blend until it is moistened. Don't over blend, leave some small clumps.

Fold in cranberries.

Fill muffin pan 1/2 full. Place in the oven 17 to 23 minutes, checking at 17 minutes to see if it springs back when touched.
Cool on wire racks.

You can add a glaze if you wish, but these were good alone as well.

IF you want to do a loaf, put into two 8x2 greased loaf pans and bake for 30 to 35 minutes.
