Eggplant lasagna

Ingredients

  • 2 Eggplant
  • 6 Eggs beaten with salt
  • 1 Lb mozarella cheese
  • 1 lb cheddar cheese
  • parmesan cheese
  • 1 large ragu sauce

Preparation

Step 1

Batter the sliced eggplant in the egg mixture. Fry with Pam. Arrange the layers. Pour remaining egg batter on last layer. Bake for about 30 minutes.

This recipe is for three layers. (oval pan or 9x13)
