Fruit Platz - Mom's Recipe

Platz are a thin Mennonite coffee cake, topped with fruit and a crumble topping. You can vary the fruit however you wish. Try using berries, rhubarb, plums, peaches, pitted fresh cherries, or even a mixture to make up your own combination. The result can be a very moist cake so you may need to cook it a bit longer than stated. It’s best eaten the day it’s made and doesn’t freeze well. It's also a fantastic way to use up all that rhubarb growing in your garden.

Ingredients

  • BASE
  • 1/2 Cup Cream (or milk with 2 Tbsp of butter)
  • 1/2 Cup Sugar
  • 1 egg beaten
  • 1 tsp baking powder
  • 1 tap vanilla
  • 1 1/3 Cups Flour (approx.)
  • FRUIT LAYER
  • 3 cups sliced fruit (approx.) Tart plums or Rhubarb tastes great
  • 1/2 Cup Sugar
  • 2 tsp Minute Tapioca
  • CRUMBLE TOPPING
  • 3/4 Cup Flour
  • 1/2 Cup Sugar
  • 1/2 Cup Butter

Preparation

Step 1

1) Mix together ingredients for base to form a soft dough.

2) Press dough into bottom of 9x13 baking pan to make a thin layer

3) Place plum halves cut side down, or other sliced fruit over dough

4) Sprinkle with sugar and minute tapioca

5) Mix together ingredients for crumble topping until crumbly in texture

6) Sprinkle topping over fruit layer

7) Bake at 350 for approximately 35 - 45 minutes, or until crumbs are lightly browned.
