CURRIED CHICKEN (Five Roses)

Ingredients

  • 1 3-4 lbs. Chicken in pieces
  • ½ cup of flour
  • 2 teaspoons of salt
  • 1 teaspoon curry
  • ½ teaspoon paprika
  • ¼ teaspoon ginger
  • ¼ teaspoon of pepper
  • ¼ cup of butter
  • 2 cups of cut apples
  • 1 small onion minced
  • ½ cup of coconut shredded
  • 2 cups of chicken bouillon
  • ½ cup of cream

Preparation

Step 1

1. Mix flour with spices and cover chicken pieces.
2. Melt butter, and sauté chicken.
3. Cover and cook slowly for 30 minutes.
4. When tender, take chicken aside, add apples, onions and coconut and cook for 5 minutes.
5. Mix ¼ cup of flour in the chicken bouillon, return to the casserole and add cream.
6. Cook until sauce thickens (about 5 minutes).
7. Return the chicken to the casserole and reheat for 10 minutes.
8. Serve with steamed rice.
