Blueberry Lemon Snack Bars

Ingredients

  • 1 1 1 Lemon Cake Mix
  • 1/2 1/2 1/2 cup butter, melted
  • 3 3 3 large eggs
  • 1 1 1 package (8 oz.) cream cheese
  • 2 1/2 2 1/2 1/2 cups confectioners' sugar
  • 1 1 1 can (21 oz.) More Fruit Blueberry Pie Filling & Topping
  • 3/4 3/4 3/4 cup coconut, flaked
  • 3/4 3/4 3/4 cup walnuts, chopped

Preparation

Step 1

Preheat oven to 325ºF. Grease a 9” x 13” pan.

Combine cake mix, butter and 1 egg; blend well.Pat mixture into bottom of the prepared pan.

Beat cream cheese until fluffy in a large mixing bowl. Add the remaining 2 eggs and confectioners’ sugar. Pour over cake mixture in pan and spread blueberry fruit filling on top and sprinkle with coconut and nuts.

Bake 1 hour or until lightly browned. Refrigerate until chilled; cut into bars.
