Cream Puffs

Ingredients

  • Puff:
  • 1 cup boiling water
  • 1/4 c marg/butter
  • 1/4 cup shortening
  • 1 cup flour
  • 1/2 tsp salt
  • 4 unbeaten eggs
  • Custard:
  • 1/2 whipped cream
  • 1/2 instant vanilla pudding

Preparation

Step 1

Have water boiling in heavy saucepan
Add marg/butter and shortening
Stir until melted
Add flour and salt all at once
Stir vigorously until blended
Continue to stir until mixture leaves sides of pan in one mass
Remove from heat and cool one minute
Add eggs, unbeaten, one at a time
Beat until smooth after each addition
Brush TBSP with oil and use it to dip out spoonfuls of batter on oiled cookie sheet
place them 2" apart
Round and shape them up with spoon
Bake 450 degrees for 10"
Reduce heat to 400 and bake another 25"
DO NOT OPEN OVEN DOOR WHILE BAKING

Cool
Cut slit in side
Fill with custard
