Penne with Balsamic Broiled Vegetables

Ingredients

  • 3 c. penne pasta cooked
  • 2 small zucchini
  • 1 medium red bell pepper
  • 1/2 c. Ken's Lite Balsamic Vinaigrette
  • 1/2 c. feta cheese crumbled
  • 2 Tbs. fresh mint, chopped

Preparation

Step 1

1. Cut zucchini and red bell pepper into 2"x 1/2" strips.
2. Toss to coat with 3 Tbs. vinaigrette
3. Put vegetables on a pan and sprinkle with pepper.
4. Broil for about 10 minutes, stirring occasionally, until vegetables are tender.
5. Mix vegetables with pasta, remaining vinaigrette, cheese, and mint.
